American-style endives

  • 8 endives
  • 100 g breadcrumbs
  • 50 g finely grated Parmesan
  • 2 egg yolks
  • 2 teaspoons Cajun spices
  • salt and pepper

Clean the endives then allow to drain. Make sure they stay in good condition. Steam the endives until they are cooked through (assess for yourself with the help of a sharp knife). Whisk the egg yolks and add a teaspoon of Cajun spices. Dip the endives in the egg-based mixture. Mix the breadcrumbs with the rest of the Cajun spices and the Parmesan. Roll the endives in the breadcrumb-based preparation. Plunge them into the fryer at 350 °F until the endives are golden.
